Christmas Trees and Menorahs

On Tuesday we went back to our storage unit and pulled everything out looking for our tree and ornaments. They are gone. :-( All my ornaments I've been collecting for many years, Taylor's first Christmas ornaments, as well as all the ornaments I've made with Taylor are gone. I'm so very sad.

Life goes on so we've replaced the tree and bought some simple ball ornaments.
























Taylor and I decided to start a new tradition and every Christmas we will buy one new ornament each that reminds us of the year we had.

I already got mine.
























I just need to find or take a picture to put in it.

If anyone is wondering why on earth would we use a fake tree instead of real one. Well one year we had some little visitors that came with the tree we bought from the lot. Spiders and a lot of them. I do not like spiders. Getting them to move out was not an easy job. So we fake it now.

Hanukkah Dinner

For the last night of Hanukkah I made Jason Roasted Chicken and Vegetables with Latkes.


















I used Chicken Legs and for the vegetables I used carrots, parsnips, and onion. In a roasting pan I added the chicken and vegetables. I seasoned with olive oil, garlic and onion powder, basil, salt and pepper. I baked in the oven on 375 degrees for about an hour. For the latkes I got the recipe from the food network minus the scallions. I served them with apple sauce and sour cream.

Christmas Dinner Planning

Now I have to start planning for Christmas dinner. I'm excited because my family is coming to town.
Can't wait to see my niece and nephew.

I can't get over how it's been six days since my last post. Boy the days are going by fast. Last Saturday Taylor and I went to our favorite gingerbread party. We've been going every year since 94.

Feliz Navidad

We started decorating for the holiday's on Wednesday.

















We have a fake tree that seems to be missing with all my ornaments. I'm pretty sure it's at our storage unit. I'll just have to wait until next week to get it. In the meantime we have a few lights up to enjoy. 

For Dinner last night and tonight I went Mexican. Last night Chicken Fajitas and tonight Mexican Pizza. Both super easy and super tasty. Two of my favorite things.

Chicken Fajitas

chicken

shredded cheese
tortillas 
salsa 
sour cream

I baked the chicken earlier in the day. 
























Cooked onion and green bell peppers in some olive oil.


I Shredded the Chicken and added  it to the pan.



















For the Salsa I cut up one tomato, added some lime juice, onion, garlic clove, cumin, cilantro, salt and pepper.




















For dessert we had Taylor's new favorite cookies.






















Mexican Pizza

tortillas
ground beef
shredded cheese
enchilada sauce (recipe below)
taco seasoning (recipe below)
salsa
sour cream

I put the tortilla in the oven to become crisp.

















Cooked the ground beef in a pan. Seasoning it with taco seasoning.

Taco Seasoning

This is a healthier taco seasoning then the packaged seasoning you get at the store. I like making my own  because I get to control the amount of salt as well as I know what is in it.

2 tbsp Chili powder
1 1/2 tbsp Whole Wheat Flour
2 tsp Cumin
2 tsp Ground Oregano
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/2 tsp Cayenne pepper
1/2 tsp Paprika 

Directions
Mix all ingredients together.
Store in an airtight container.


Enchilada Sauce


2 Cups No Salt Added Tomato Sauce (2 8 oz. cans)
2 Tbsp Taco Seasoning (above)
Sea Salt & Black Pepper to taste

Directions
Combine all ingredients in a sauce pan. Stir over med-low heat for 5 mins.


Building the pizza.

Add a couple tablespoons (or more if you want) of sauce onto a baked tortilla. Add some of the seasoned beef. Add the cheese.

Broil for a couple minutes.

Add Salsa and Sour Cream
