Sweet Balsamic Tomato Bruschetta & Caramelized Onion and Pepper Bruschetta






This is one of my recipes from SkinnyStove.com. I've been craving the Sweet Balsamic Tomato Bruschetta for the last couple of days. Yesterday I went to our local farmers market and I got what I needed to whip this up. So fresh and so good.


Sweet Balsamic Tomato Bruschetta




Ingredients

1 1/2 – 2 Plum Tomato, chopped
1 Garlic Clove, minced
2 Tsp Olive Oil, 1 tsp for bruschetta dressing and 1 for the baguette slices
1 Tbsp Balsamic Vinegar
1/2 tsp Honey
1/8 tsp Salt
1/8 tsp Black Pepper
1/2 Multi Grain Baguette, cut into 16 slices

Directions

Place the first seven ingredients in a bowl. Stir to coat and set in refrigerator to marinate.
Heat a grill pan over medium high heat. Take the baguette slices and brush with olive oil on both sides and place on a heated pan. Once grill marks are made turn over bread over to grill the other side. Remove once that side has grill marks.
Place a scoop of the tomato mixture onto each slice of bread and enjoy.

Caramelized Onion and Pepper Bruschetta




Ingredients

3 Sweet Mini Peppers, sliced
1/2 Onions, sliced
2 Tsp Olive Oil, (1 tsp for the grilling of the peppers and onions and the other for the baguette slices)
1/2 Multi grain Baguette, cut into 16 slices
1/2 cup Farmers Cheese
* Optional seasoning to season the farmers cheese.
Trader Joe’s 21 salute
Onion and/or garlic powder
salt and pepper

Directions

In a fry pan heat 1 tsp of the olive oil. Add sliced peppers and onion. Cooked until soft and translucent. Remove from heat and set aside.
Heat a grill pan over medium high heat. Take the baguette slices and brush with olive oil on both sides and place on a heated pan. Once grill marks are made turn over bread over to grill the other side. Remove once that side has grill marks.
If you want to season your farmers cheese do so now.
Add 1/2 tbsp of farmers cheese to each toasted baguette slices and then top with the caramelized onions and peppers. Place under a broiler or a toaster over for a few minutes.

An Apple or Two a Day

Looking for the motivation to do my workout today. Let me know if you find it.

I spent the day catching up on reading blogs. I love reading other peoples stories, learning new things and getting inspired.

Snack

 I had a hard boiled egg. I know boring but it sure hit the spot and kept me satisfied until lunch.

Lunch

I loved what I made for lunch. I took a couple handful of spinach leaves, a diced up apple and tossed it with a white vinegar, olive oil and honey dressing.


















For the Dressing I whisked together
2 teaspoons of white vinegar
1 teaspoon of extra virgin olive oil
1 teaspoon honey
1/8 teaspoon of garlic powder
a pinch of salt and pepper

De~lish~ous!

I also defrosted a slice of the apple cake I had made a couple weeks ago.



















It was a perfect apple filled lunch.

I also added my swag widget to my blog. I signed up a few months ago and had forgotten about it. Anyone else Swagging?

Another Day That Just Got Away

Spent most of the day in meetings. Spent some of the day in traffic. Best part of my day was the dinner.

Dinner
A couple weeks ago I bought a bag of shredded Monterey Jack Cheese that was way too much for anyone. The last few days I've been looking for ways to use it up. Tonight I finally used the last of it. I made Philly Cheese Steak Sandwiches with Garlic Mayo. I replaced the green peppers with yellow peppers. Oh so good!

I was kind of getting sick of cheese and probably will take a week or two off from it. I'm glad I went out with a bang.

Dear Diary,

A couple weeks ago while unpacking I came across a box with old letters, photographs, and three of my old diaries. I ended up putting the unpacking aside and spent the rest of the day engulfed in the contents of the box. I had such a wonderful time going down memory lane that I've decided to make this blog "my (sort of) diary".






I'm going to blog and post photographs of my favorite things... family/friends (Love), Life, and Food. It's MY (SWEET & SAVORY) OBSESSION WITH LOVE, LIFE AND FOOD.

Zuzu is the place that woke up my taste buds and made me fall in love with food. When I visit Napa (a couple times a year) I always make a point of dropping in and treating my taste buds.
