OOC - Yep That's Me

Still feeling a little under the weather. Didn't do my morning workout because of this bug I have. Hoping to feel better by this afternoon so I can at least do a small workout.

Breakfast

I had a bowl of oatmeal with half a banana and a cup of coffee.

Snack

Half a Cheddar Cheese Bagel (from Von's Bakery) with a very small amount of Neufchatel.

Yum. Not on my healthy list but I was so hungry. I only had half. Von's bakery has the best bagels and sandwich rolls.

Lunch

I had a cup of chicken noodle soup.

When I feel like this my brain tends to turn to mush. I can't even think of a title for this post. That's why this post is stuck with this silly title.

An Apple or Two a Day

Looking for the motivation to do my workout today. Let me know if you find it.

I spent the day catching up on reading blogs. I love reading other peoples stories, learning new things and getting inspired.

Snack

I had a hard boiled egg. I know boring but it sure hit the spot and kept me satisfied until lunch.

Lunch

I loved what I made for lunch. I took a couple handful of spinach leaves, a diced up apple and tossed it with a white vinegar, olive oil and honey dressing.

For the Dressing I whisked together
2 teaspoons of white vinegar
1 teaspoon of extra virgin olive oil
1 teaspoon honey
1/8 teaspoon of garlic powder
a pinch of salt and pepper

De~lish~ous!

I also defrosted a slice of the apple cake I had made a couple weeks ago.

It was a perfect apple filled lunch.

I also added my swag widget to my blog. I signed up a few months ago and had forgotten about it. Anyone else Swagging?

Today I'm Grateful for...

the view I have when I'm working out. I picture myself lounging by the pool in a bikini one piece bathing suit. That keeps me motivated throughout my workout.

Right as I was finishing my workout I received a call from J with some not-so-good news. J was in a fender-bender and J was at fault. ugh! I'm grateful nobody was hurt (besides our pocketbooks).

Lunch

Turkey Chili Burrito, an Apple, and a cup of Green Tea

I made a burrito out of the leftover turkey chili from last night. I used a flour tortilla. I would have used a healthier choice if it wasn't for the large quantity of flour tortillas I have and need to get rid of. I refuse to waste food.

I added a small amount of cheese and a large handful of shredded spinach leaves.

This was so good.

Lunch, Dinner and Work

Lunch

For Lunch I had half a almond butter and honey sandwich on whole wheat bread. An Apple and half of a large carrot. I had made a whole sandwich but I was feeling full so I just wrapped the other half up to eat later.

Today I wasn't the best when it came to snacking. I know it really important to eat every few hours. If I was being graded I would have gotten a F. I need to work on that. I also have to remember to drink my water. In the summer I never have a problem with the h2o. I still have a few hours left so I'll get my water intake in I just don't like drinking too late.

Dinner

For Dinner I had Turkey Chili over a half baked potato.

This was really good and I can't believe I've never made this before.

Turkey Chili

1 pound of ground Turkey
1 tablespoon of Olive oil
1 onion diced
1 large carrot dices
3 celery stalks diced
1 clove of garlic ( I will use more next time. I love garlic)
1 can of stewed tomatoes
1 can of tomato paste
1 can of Kidney beans
1 can of Great Northern beans
1 cup of chicken stock
1 tablespoon Chili powder
1 tablespoon of honey
1 teaspoon dried oregano
1 teaspoons ground cumin
1 teaspoon dried basil
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon salt (or to taste)
1 teaspoon ground black pepper

Cook the ground turkey in a pot until fully cooked. Drain and set aside.
Into the pot add olive oil, onion, carrot and celery. Cook until soft. Add garlic and cook another minute.
Add the turkey back into the pot, beans, tomatoes and tomato paste.
Add all the remaining ingredients.
Simmer for 2 hours
After the 2 hours add salt and pepper to taste.

Work

Work was a little slow. We did receive a couple audition and a callback. I still have a little bit of work to do before I go to bed.

I'm really tired and will be going to bed early tonight. I would like to start my workout at the gym earlier then I started today. So this works out perfect.

Goodnight
